These 8 Healthy Toddler Breakfasts are not only super fast to make but they are also filled with protein and fiber as well as other essential vitamins and minerals for growing toddlers! They are also so good, that they will be on repeat at your house for weeks.
A couple of months ago, I did this fun post featuring 12 Healthy Toddler Lunches. And well... it kinda exploded on Pinterest.
It seems like the rest of you parents are in need of healthy and easy to make meals for your little one as much as I am.
It feels good to be in the same boat as you! Like long-lost-friends that are hanging on for dear life as we stare down our amazing-but-crazy toddlers. If we go down, at least we go down together. I am mostly okay with this because I know you brought a bottle of wine to share;)
Now that we have some easy lunches at our disposal, it's time to bring on breakfasts.
Because no matter how many breakfast recipes you have up your sleeve, when your toddler wakes up with the sun (way before you have reached a sufficient level of coffee consumption) demanding their breakfast be ready in 5 seconds, you need a secret stash of healthy and E-A-S-Y breakfast recipes at your disposal.
These 8 breakfasts are the ones I serve over and over again because they are
1) easy to make when you I am crunched for time (which is like every morning, so.not.a.morning.person)
2) full of healthy nutrients (yay! Easy way to check off being a good parent for the day)
3) are so good that both of my girls will devour them in a matter of minutes (or hours, depending on how long it takes them to find and feed their favorite toys and how many times they have to potty during breakfast. Seriously thou.)
Once again, I partnered with my favorite brand of baby and toddler food, Beech-Nut, to provide you with some breakfast recipe inspiration that are filled with whole-grains, protein, healthy fats, fruits and even some sneaky veggies. A tasty and healthy way for any growing toddler to start the day.
Now, bring on the second cup of coffee (or third, no judging your caffeine intake here) and let's get this breakfast rolling!
Breakfast on Left - cream cheese + jelly waffle breakfast sandwiches, Beech-Nut mango puree mixed with Beech-Nut apple puree (or homemade recipe here) with greek yogurt and a raspberry center and some chopped blackberries.
To make Cream Cheese + Jelly Waffle Breakfast Sandwiches - toast 2 frozen pre-made or homemade waffles, let cool slightly. On one waffle, spread a heaping tablespoon of whipped cream cheese on one side. On the other waffle, spread a heaping tablespoon of jelly (I also like to use the Beech-Nut just apple & blackberry or the just apple, strawberry & beets for a sugar-free version) on one side. Sandwich sides together and press down gently so they don't come apart. Cut into wedges, squares or use your favorite cookie cutter.
Breakfast on Right - cinnamon + maple syrup instant oats with a container of toppings such as chopped nuts, dried cranberries and hemp seeds. There are also some chopped strawberries (they usually end up in the oatmeal as well) and a Beech-Nut banana, blueberry & avocado pouch (make your own banana, blueberry + avocado pouch here).
To make the Cinnamon + Maple Syrup Instant Oats - in a small bowl stir together 1/3 cup of instant oats, 1/2 cup hot water, 1/4 teaspoon cinnamon and a generous drizzle of maple syrup. Mix together and let sit for 1-2 minutes before serving. I also like to add in 1/2 teaspoon of ground flax seeds into our oatmeal for even more protein, omega-3 fatty acids and antioxidants.
Breakfast on Left - gluten free chocolate sweet potato blender muffins, sliced apples and blueberries.
To make Chocolate Sweet Potato Blender Muffins - follow this recipe for spiced blender muffins (third recipe down) except reduce the amount of oats to 3/4 cup and add in 1/4 cup cocoa to the blender instead. Follow the direction as otherwise indicated. Feel free to add in some mini chocolate chips or chopped walnuts for a special treat. These muffins also freeze well and are a great way to always have a delicious breakfast on hand when really crunched for time!
Breakfast on Right - hidden veggies scrambled eggs, chopped avocado and english muffin wedges with jam.
To make Hidden Veggies Scrambled Eggs - whisk together 2 eggs, 1-2 teaspoon2 Beech-Nut just carrot puree, 2 teaspoons milk and a pinch of salt and pepper. Scramble in a medium skillet over medium heat for 2-3 minutes or until eggs are cooked. You can also add in a tablespoon of cheese, chopped red or green peppers or chopped mushrooms, or really anything your toddler will like:) I have also used the Beech-Nut just sweet potato, just butternut squash and the just apple & kale puree in the same recipe with great results.
Breakfast on Left - rainbow fruit and cinnamon + sugar toast dippers with honey Greek yogurt and a simple green smoothie. Don't get intimated by the rainbow fruit, use any fruit you have on hand.
To make Simple Green Smoothie - in a blender add in 1 Beech-Nut pear & apricot pouch, 1 handful fresh spinach, 1/2 banana, 1/2 cup of milk (of choice) and 1/2 cup of ice, and blend on high for 1 minutes or until smooth and creamy.
Breakfast on Right - tropical almond butter + banana rollups, Beech-Nut banana, blueberry & green bean melties (your favorite crunchy cereal will also work) and a blackberry, grape and kiwi finger salad.
To make the Tropical Almond Butter + Banana Rollup - spread 1-2 tablespoons of almond butter over an entire tortilla (I used whole wheat which I first gently warmed in my microwave to make it easier to work with). Sprinkle 1 tablespoon of shredded coconut on top and then place a peeled banana in the middle of the tortilla. Roll the tortilla around the banana and press down to seal the tortilla pieces together. Cut into 2" inch long pieces and serve. This is also a great recipe for a quick and fun lunch roll!
Breakfast on Left - hard boiled eggs with pepper, Beech-Nut just pear puree with blueberries and chopped chicken + apple breakfast sausage (Applegate brand is our favorite).
To make Hard Boiled Eggs - we love using this egg cooker or using this oven method for an easy hands-off way to make hard boiled eggs.
Breakfast on Right - blender pancakes with berry maple syrup dip and orange wedges.
To make Blender Pancakes - I seriously use this recipe all the time. They are also great with blueberries, strawberries or even dark chocolate chips mixed in before cooking. To make the Berry Maple Syrup Dip - mix together equal parts maple syrup and Beech-Nut just apple & blackberry puree until well incorporated. I like to have mine slightly warmed on my pancakes.
